DIETARY SERVICES DIRECTOR

The Dietary Services Director is responsible for supervising a full-service food service operation within a state-operated facility. This position is governed by state and federal laws and agency/institution policy.

Weekly on call duty is required.

Typical Functions:

Supervises a large service and clerical staff by interviewing and selecting applicants for hire, assigning and reviewing work, approving leave, and evaluating the performance of incumbents. Plans menus considering special dietary needs, balanced diet requirements, facilities and personnel available, and budgetary restrictions. Inventories stock of foodstuffs, supplies, and equipment necessary to maintain operations. Estimates requirements for planned menus and orders supplies. Inspects deliveries to insure quality and quantity meet requirements. Determines and ensures proper storage of all food items. Directs staff in food preparation and serving to ensure proper preparation of special diets, proper sanitation, and safety requirements are met. Checks prepared food for taste and edibility. Compiles and prepares reports or oversees preparation of reports and records of food and supplies used and ordered, patients or clients served, and operation costs. Performs other duties as assigned.

Knowledge, Abilities, and Skills:

Knowledge of food systems management principles and methods. Knowledge of food science principles and methods. Knowledge of state and federal health and safety regulations and requirements for a full-service food facility. Knowledge of nutrition as part of patient therapeutic management. Knowledge of supervisory practices and techniques. Ability to manage a food service system department and plan, organize, and direct the work of subordinates. Ability to analyze nutritional value, cost, and service of food. Ability to plan menus and direct the food selection, preparation, and service of large-scale meals.

Minimum Qualifications:

Licensed as a dietician by the Arkansas Dietetics Licensing Board in accordance with ACA 17-83-301; plus two years of experience in administrative or clinical dietetics. Additional requirements determined by the agency for recruiting purposes require review and approval by the Office of Personnel Management. OTHER JOB RELATED EDUCATION AND/OR EXPERIENCE MAY BE SUBSTITUTED FOR ALL OR PART OF THESE BASIC REQUIREMENTS, EXCEPT FOR CERTIFICATION OR LICENSURE REQUIREMENTS, UPON APPROVAL OF THE QUALIFICATIONS REVIEW COMMITTEE.
